There was a lot of interest about steeping green teas. One method is to use a low temperature water. Coaxing the flavour and body from the green leaf is preferred. I like to use water a little hotter than hot tap water. It should only take a minute or so to win over the silky, fragrant taste. Introducing boiling water to a green leaf forces the leaf to hand over its goodness, and can produce a sharp taste. Force doesn't work well in a lot of situations, such is the case with tea.
